Winemaking: The Pinot Grigio grapes for the production of this wine come from the Prabi vineyard and the Pressano hill. They are vineyards characterized by rich, deep soils that transmit to the variety a suitable vigor. The vines have an average age of 20 years; they are trained using the Guyot and Trentino Pergola methods, with a density that ranges from 3,000 to 7,000 plants per hectare.


The hand-picked grapes are crushed and pressed in the absence of oxygen and without the addition of sulfur dioxide. The must ferments partly in stainless steel vats and partly in large oak barrels. The long contact with the fermentation yeasts and the repeated b?tonnage during aging give the wine delicacy and complexity. In May it is bottled and sold after a brief period of rest in the cellar.
